You can't. One of the defining differences between Natty (Ubuntu
11.04) and Oneiric (11.10) is that Natty is based on GNOME 2 libraries
and you can drop back to Classic GNOME. Oneiric is based on GNOME 3
libraries and it's Unity or Unity-2D.

The closest you can get is to install GNOME Shell and log in in
"Fallback mode". Here is a step-by-step guide:

This approach is rather inefficient and it is quite likely that
Fallback Mode will disappear in a future release of GNOME 3.

If you want a modern, lightweight, fast GNOME-2 like environment, try Xubuntu.

It's Ubuntu but replaces GNOME with the Xfce desktop, which can be set
up to be very like GNOME 2.

Me, I'd advise getting used to Unity. It's quite nice really once you
get your head around it. Honestly!
