If he's installing grub into "/boot/" (as he must be because he's
preseeding the install and, AFAIK, there's no option to install grub
elsewhere from within d-i), there's no need to use "--root-directory".

You're somehow confusing the installation of grub to a PBR (rather
than the MBR) with the installation of grub to
"/jordons/custom/grub/dir/".

(FYI - and thanks to Goh Lip as the source - in Natty, there's a new
"--boot-directory" flag).
