Explain to me again why Unity is so great...

I think a lot of people, including myself, have the same feelings as
you towards Unity.  However, I know there are plenty of people who are
enjoying it.

I myself have made the move to Debian.  I am sure there will be a time
when Gnome 3 will be the default in Debian stable, but at least I know
that won't be until the next release, and there will be enough time
for the kinks to be worked out.

The great thing about Linux is the amount of choices we have.  I don't
like the direction Ubuntu is heading towards, so I switched away from
it.  I recommend to you to maybe go back to SuSE if you feel the same
way.
