Canonical Ltd's main servers are in a datacenter somewhere in or near
London. The company also has its offices in London and the corporate HQ
is on the Isle of Man (probably because of fiscal reasons).

London time or UK time or GMT also happens to be identical to UTC, and
Linux just happens to keep the pc time in UTC, with an offset for your
local timezone.
