Can I disable one of the cores?

I'm teaching a systems programming course, and for one of my demos it would
be most convenient to run on a uniprocessor.
These are hard to come by these days.

Can I get Ubuntu to run correctly with only one processor?  Is it good
enough to recompile a non-SMP kernel?  Is there
something I can do in the kernel parameters (simpler than a recompile)?
