How to add a custom action for a file type

Hi,

I'd like to configure Nautilus to pop up the Send To dialog when I click a
specific file type. How do I do this?

I mean: When I right click a file and go to the "Open With" tab, there's
nothing there.

I am running Ubuntu Lucid.

Also, how do I remove items from the available application list that opens
when I click on the Add button at the bottom? I have Notepad 10 times and
KDE apps that are not installed...
