Gnome sensors ($ sudo apt-get install sensors-applet) can be configured
to sound an alarm and you can enter a command to be applied for low/high
alarms. That may be what you are looking for. See:
http://sensors-applet.sourceforge.net/index.php?content=home
<http://sensors-applet.sourceforge.net/images/screenshots/005-configure-sensor.jpg>
That's an old screenshot as my version GNOME Sensors Applet 2.2.3 has a
command section for both 'Low alarm command' and 'High alarm command'.

Note: don't click on the help command as it seems to crash the applet
(at least on my system).
