OK, It's logging again... I guess when I re-installed tomcat, it went
back to using the wrong JVM, and that "fixed" the logging issues, then
when I "fixed" the JVM, it broke the logging again! So now after
Konstantin's advice above, it IS logging, AND using the right JVM.
