If you set
GRUB_TIMEOUT=-1
in
/etc/default/grub
and run
update-grub
the menu will be displayed until a selection is made. I am not sure
how to set grub2 to display its menu and boot its default after a
time-out.

You should be right-clicking on a directory not a file.

If that does not work, I have no idea because i have never used the
GUI for file sharing, sorry.
