If you want to try something the exact opposite of gnome-system-monitor
in terms of resource utilization take a look at gkrellm. It is really
pretty surprising how much it can monitor whilst putting almost no
additional load on the system. Lots of options for what you want it to
monitor.
The default theme isn't too hot, but there are plenty around that can be
used to make it look however you like. I like the "invisible" theme
myself ;)
