Format program? - deleting unwanted instances of Ubuntu OS

It sounds like what you're talking about is the boot screen in Grub where
you select which thing to boot having lots of entries? If so then try
running the Computer Janitor program from the System -> Administration
menu. It should delete all the obsolete kernel packages and reduce your
Grub menu back to the one Instance of Ubuntu you are using + the Vista
option.
