Here is a good guide to spam filtering with Postfix (although it may
be a little out dated)

Generally, here are my recommendations for your requests. You usually
can just google "ubuntu <program name>" and find decent guides for
most of them. I understand though that without know what the <program
name> should be, it can be difficult.
First, start with Postfix
For pop3/IMAP both courier and dovecot have their strengths and
weaknesses. I have always used courier, but like dovecot. To me it
is pretty much a 50/50 toss up, although I am sure there are others
who would differ. I would just pick one that you can find a guide for
and go with it. I think the first link above has a courier guide in
it.
Webmail:
I am currently using roundcube: http://roundcube.net/ It has its
shortcomings, but I tend to like it better overall than Squirrelmail.
Antivirus/Spam filtering: amavis with clamav and spamassassin
