Not at all. They do DNS authorization to make sure that the mail is
not spoofed. There may be some checking (spamfiltering) to do
automatic checks of the email that use scoring systems to determine
whether the mail might be spam or not. But that's far from "listening
in" on the email conversations. Theoreticalky, an ISP admin could read
your mail, but there aren't enough hours in the day to be doing that.
