Audacity not consistantly working favorably

I am experiencing inconsistancies with Audacaity in general. When recording vinyl I hear the tracks over riding during play back so they are playing simultaneously. This happens whether I export each track as wav or  multiple export. There are times that I cannot record a sound track with guitar or vocal.
