Thanks. I was trying to avoid one more mailing list unless its really,
really necessary. And I think somewhere along the lines this is a Ubuntu
packaging/update issue.

I did have a brainstorm and restarted syslog, which gave me logging
back. That must have gotten whacked when I re-installed postfix. The
reinstallation seems to have fixed some things, and now with logging I
think I've got it nailed. Not sure why it broke in the first place,
but its working well enough now. Thanks.
