Postfix and Mail Blues

Has anyone been through this scenario and solved it:

I had a working mail set up using Postfix on previous Ubuntu's. It is
completely broken now. I am guessing the breakage occured when I
upgraded to 8.04 but I didn't really notice until recently. 

The weird thing is no mail goes anywhere, and nothing shows in the
logs. I can telnet to port 25, and it *looks* like a working set up:

Not a whisper. Those entries are all from last night trying to figure this out.
Not a thing from tonight from the hour or so trying. Last night I even
uninstalled postfix. Manually removed the config directory in /etc/, and then
re-installed. No dice.

I am not necessarily hung up on postfix, but have used it for years without
serious problems. Before giving up, I'd like to figure out what's so broken.
