I use Rhythmbox and it works fine.  You can rate individual files or groups
of files.  It includes an automatic play list "My Top Rated" or you can
create your own playlist using rating as one of the factors.

Editing is simple.  Right click on a file or a range of files.  Select
properties/details tab.  Choose your rating at the bottom (1-5 stars).

If you're looking for a more robust mp3 tag editor/creator I use and
recommend Audio Tag Tool.  http://pwp.netcabo.pt/paol/tagtool/  which is
available in the add/remove applications.
