I've done a bit more research since my original post, and found
instructions at

... and a couple of others. I have ordered a Hitachi 2.5" 120 GB 5400
rpm ATA 100 parallel drive, which has a thickness of 9.5 mm, apparently.
According to the local Apple Centre tech, the 9.5 mm thickness should
fit.

The replacement procedure looks fiddly, to say the least, but with some
care and patience I hope to manage it.
