I know you didn't ask for a Visio replacement, but
Dia is rather nice Visio type replacement:

Don't forget about OpenOffice's Draw program.

As others have mentioned: Inkscape, qcad, gnucash. Also definitely have
a look at Scribus for MS Office Publisher replacement.

Note: all of the above are available in the Ubuntu repositories, so no
need to compile individually.
