You could take a look in the in depth HTML/PDF guides in tldp.org[1], and the 
guides in debian.org[2], which would be more or less specific to ubuntu 
installations (in respect to dpkg administration, at least).

For example, the SAG[3] is somewhat dated (2005), but should be more precise 
than the dead-tree books you have in hand.

Also, most specific topics have an in-depth HOWTO, also available in TLDP[4]

But the SAG and the NAG[5] should be pretty fast to read using your precious 
UNIX knowledge, if you take the diffs. (although note that NAG 2ed being 
2000, should not include the latest info on network-manager... oh well...).

MarioV has a point on recent changes in general (udev, hal, etc). I don't know 
of any books and guides on recent debian-based distros, but there should be 
some of redhat. I can't help you on that, but you might google for it.

Last, but not least, you could look into a ubuntu-specific reading on wheter 
official [6] and unofficial [7]

Is that enough reading for starters? ;-)
