issue with viewing apps in full-screen with F11

I just remembered: the same issue also happens with gnome-terminal,
not just evince.

I just did a test: run an evince session from my home box, displaying
in my work box, and the full-screen appears fine, without the menu
bar, as it should. This must be something in my gnome configuration at
home. How can I provide better debugging information?
