It's not in the Preferred Applications dialog in Dapper, at least.
However, the following link exists in /etc/alternatives:
lrwxrwxrwx 1 root root 14 2007-01-05 10:15 gnome-text-editor -> /usr/bin/gedit
I would expect the following to work for you:
$ sudo update-alternatives --config gnome-text-editor
And then selecting gvim from the provided list (assuming it registers
itself as a possible alternative for the gnome-text-editor).
