I would not recommend adding this unless you have tested it on more than
one system and it works.

I realize now that the OP had said he runs a server, which usually as
you rightly pointed out means "no X". I have no idea how do do it
correctly then because I have no idea if the dependency tree will be
satisfied without ubuntu-desktop. At this point I would do what you
recommended but schedule downtime and be prepared to do some manual
dependency wrangling.
Just FYI, there is talk about implementing a command line front end to
Update Manager, see the sounder thread I mentioned.

Maybe someone with experience using the server install can chip in?
