Although I haven't tried it myself yet, as I can't even picture the operating concept of Xen (all I "understand", is that it's not at all as simple and user friendly as VMWare workstation), but there is a Howto in the Ubuntu help pages:

1) go to System->Help->Online Documentation
2) click on the "Community Docs" tab
3) in the search box type "xen"

it should return a few matches, the one for Edgy is there:
