Have you been into System > Administration > Language Support added the
languages you want? That will get the dictionaries etc installed. How
you tell each app which one to use depends on the app. Ask specifically
and I'll try and help.

As I said to Pekka, in evolution when you are writing an email you go
into Edit > Current Language to pick the language for the email you're
working on. I didn't know gaim had spell checking...
