LiveCD: customize gnome-app-install groups?

Hiya,

We're remastering an Ubuntu Dapper LiveCD and want to create a
customized group for Add/Remove Programs (i.e. gnome-app-install) so
that we can group together packages that are already set-up for local
use and maintained locally.

Any suggestions on how one goes about creating such a group?
