Once all your package setup woes have been sorted, try "dpkg-reconfigure
linux-image-2.6.15-20-386 linux-image-2.6.15-20-k7" to get proper
initramfs images generated for both.

This is arguably a bug in initramfs-tools for not seeing 'vga=' and
loading vesafb.  If you install usplash, it will include hooks to load
vesafb on boot, giving you the behavior you're expecting.
