Perhaps. You have to subscribe to folders - I don't know the technique in
Evolution (I use KMail) but you probably just right click on the mail
store.
However, from memory, Courier expects all mail to be in $MAILDIR, in
$MAILDIR/.FOLDER/ (for first level subordinate folders) and
$MAILDIR/.FOLDER.SUB/ (for lower level folders). All those mailboxes are
hidden directories. There are also a bunch of files used internally by
courier (all with "courier" in the name) but it will recreate those if not
found, so you don't need them.
My usual advice is to create a folder from within your mail program - if
that works, copy its structure for the ones you're trying to import.
