Evolution and signatures...

I've tried turning html mail on and off...
I've tried setting up a new signature (which threw a fatal error the
first time)
I've read through the doc's on signatures and html mail, and it seems
that evolution is setup properly.

But, every email I send with a signature, delivers html "code", NOT HTML
MAIL.

I see the same effect in Linux, using evolution, and in Windows, using
Outlook.

This is what the message looks like when it is delivered
