install xboard, phalanx, eboard, gnuchess and

start them with xboard from a terminal for example :
xboard -size medium -fcp phalanx

eboard is also quite interesting, aimed at playing online on FICS, but
it's also possible to play against gnuchess with it, although there it
has some annoying bugs (and development of eboard has stopped a while back,
new developers needed!)
