UTF-8 vs. ISO-8859-1

Evolution is a GNOME app.  GNOME uses Unicode internally, regardless of what 
you set your locale to.  AND, GNOME is very good at unicode.  So I doubt 
that's your problem.  You might just need better fonts preferences or 
something.

I'd suggest switching back to UTF-8 as quickly as possible, and working 
through any problems that seems to show up.
