A system (even a single NIC) may have more than one IP address.  It's OK
to send mail via localhost as long as the ethernet card which connects
you to the rest of the world has an IP address and, where reverse DNS
checking is employed, the ethernet card has an IP address which when
looked up (PTR record) and the resulting hostname looked up (A record)
yields that same IP address.  The desktop's postfix will accept the mail
on localhost, then queue it for delivery via the ethernet interface. 
This is usually achieved by adding "relayhost = name.of.mail.hub" to the
desktop's /etc/postfix/main.cf
