Oh man, it's not that serious. There's no reason why you cant have
Gnome, KDE, Enlightenment, Windowmaker, Blackbox, Fluxbox and so on
installed all at the same time and log into whichever takes your fancy
on any given day.
Initially, Ubuntu comes as it is partly for ease of use and partly to
avoid the multi cd install thing. Not because of some kind of religious
commitment to gnome.

Don't know about Notes apps, sorry.
