there are a couple of ways to do this.
gdm (gnome desktop manager?) is what starts x, and gives you a log in screen.
to stop this happening you can uninstall it, using synaptic, or apt-get remove gdm. this will cause ubuntu-desktop to be removed, but this is just a meta-package, which is only there to make sure the install/updater installs everything that you need.
the other way is to stop gdm running at start up, you could look at http://ubuntuforums.org/showthread.php?t=27740 , or do it manually, either by deleting /etc/rc2.d/S13gdm or by chmod -x /etc/init.d/gdm, so that it can't run.
