The problem is more the "deboostrap" method.
There is no option for "server" or "workstation".
So, I removed all gnome stuff, was suprised, that postfix was removed too,
reinstalled postfix and try to clean up the rest of the X stuff and some
other things.
Now it's working perfectly.
