Postfix and Courier will not receive mail

This may be a daft question, but have you started the postfix daemon?
(It does not have to be running to send mail, I think, but it does to
receive).
sudo /etc/init.d/postfix start
should do the trick. You might also check syslog
and /var/log/postfix/mail.err and /var/log/postfix/mail.log to see if
you are getting any errors. A typo in a config file could very easily
stop postfix from starting.
