some questions about building packages

hi list,
i just picked a package that lacks any .deb-file, so i decided to build
one by myself. all went good so far following maint-guide(new version).

BUT i do have some questions regarding things not covered in the guide:

	* how do i add a appname.desktop file to the package?
	* how do i use the same source to compile the package
	  again, after editing say menu.ex?
	  if i edit a file and start 'dpkg-build....' it complains
	  and does nothing. 
	* how do i go further in package-version, if only I make
	  changes to the package and the source is still the same?

any hints are very welcome!
