As far as I know, anything done in gconf-editor is on a per-user
basis. Someone else might know different.

All that data is used for managing your personal collections. If
you've not created any collections or bookmarks, they'll be empty.
So, lets attempt to fix your problem.
When you try and view an image what does gThumb do? If you play around
in the view menu and turn things on (image preview for example) does
your image show up? Maybe something has been accidentally turned off.
Also, check Tools -> Preferences to check the layout settings.
