We're slowly switching systems from FC3 to U5.04, including desktops and
servers. Our most heavily loaded server has been running U5.04 about
three weeks without problems. In addition to being a Top 200 news
server it is also a backup mail server (Postfix+ClamAV), 1TB mirror
server, and minor Apache server.

There is a nasty problem with EVMS breaking LILO RAID1 /boot
  https://bugzilla.ubuntu.com/show_bug.cgi?id=10304
but other than that Ubuntu has worked well for us as a server with fewer
minor problems than most distros. We have not yet tried Ubuntu on any
of our Samba servers.

Be advised that Ubuntu is going through a library change between U5.04
and U5.10 which means that newer packages with bugfixes are unusable
except in the very rare cases when they have been backported.
