Gnome panel wiped; how should I best restore the defaults?

I haven't tried this, but your settings for the panel are stored in
~/.gconf/apps/panel

You could probably just delete that directory, then logout/login and
you'd be back to the system defaults.

Of course you'd probably want to make a backup first, or test it out
on a different account.
