I would recommend Instiki.
http://www.instiki.org
It's very easy to install and run. It doesn't require Apache. The only
dependency is Ruby. (Note that Ubuntu doesn't install all the Ruby
libraries needed automatically when you select Ruby in universe. See
the Instiki FAQ for a list of the packages to install.)
