customizing the gnome menu

That's because Gnome is great, and you don't even need an app to edit
the menus !
Just open a Nautilus window and go to the location "applications:///",
there you can add/remove folder/menus at will.

Yes, it does it sometimes. But that's easy enough to add an entry to the
menu. Just go the menu you would like the app to appear in, right-click
on it, then select "entire menu", then "add entry to this menu", and
fill in the dialog as appropriate, chose an icon etc. Done :o)
