It is already hidden in there if you have openoffice.org-gtk-gnome installed.  
It isn't enabled by default because there are some problems for certain 
setups (see Debian's BTS for details), but you might like to give it a go:

Tools->Options->OpenOffice.org->General->Open/Save dialogs-> 
  uncheck [ ] use OpenOffice dialogs
