Both of those take you to the COPYING file in the source code repo and
consist of the text of the GPL itself.
Seems that the top of every, or at least most, .c files has the GPL
boilerplate. It does seem strange that their pages at:
http://gnome.org/projects/evolution
don't state the license info. The only reason I could offer is that
it's so well known that Gnome is GPL, and since Evo is part of Gnome...
but that ain't a good thing.
