Swapping the mainboard and CPU out... what do I need to know?

It's a good idea to ground the stuff that you're working on as well (so
you're at the same potential).

But, I would _strongly_ recommend using an earthing strap on your body
designed for the job or _don't_ use one at all. 

(If you don't have a proper earth strap, touch yourself to earth just
before you do the job, and then disconnect.)

Well designed earth straps have a high impedence in them so that if
you accidentally come into contact with a high voltage you're a bit
safer.

It's better to fry your (silicon) chips than yourself.
