I use Ubuntu as my web server, it's been perfectly solid and stable
the whole time.
I use packages from Universe and haven't had any issue's *yet*

What you will find is that it doesn't really matter what you use an
"Ubuntu" machine for, the build quality, documentation and support
will always be the same high standard. If you think it's a solid
desktop you can expect the same solidness from the server product as
well.
