You can't.  Gnome is a requirement for Ubuntu-Desktop.

No worries though... Ubuntu-Desktop is just a package to gather up all 
the other wonderful things that Ubuntu has chosen to go into their 
desktop package.

Removing Ubuntu Desktop doesn't actually remove anything other than a 
placeholder.
