Removing pre-installed apps

Don't know about synaptic, but with aptitude, select 'ubuntu desktop',
toggle it to purge/uninstall, then drop down to the list of packages which
depended on it and manually reselect them again to keep them installed.

Its either that, or make your own version of 'ubuntu-desktop' that leaves
out the stuff you don't want, but that involves building .deb's which means
you have to be at least a Level 3 Voodooist to perform such rituals.  :)
