I found what I thought was a decent setting for the universe version of
ffmpeg using the mp2 audio codec.  (the hoary-extras version can encode
mp3 audio but won't decode dvd video - brilliant!)  It took ages to
encode and produced a decent result, at least until I discovered the
sound ended up way out of sync with the picture.

I gave up trying to get ffmpeg to produce decent results and I'm not
hardcore enough to struggle with installing transcode.  Today I tried
acidrip and it seems to do the trick (but I still can't use mp3 audio).

I wonder if there's a more specialised list or forum that's still ubuntu
friendly but better able to help with video encoding questions.
