That depends where you're trying to use "5.1 sound". If you intend to
have all gstreamer-based applications use it, then you can choose the
Custom sink in System> Preferences> Multimedia Systems Selector. In
that text entry field, you'll type "alsasink device=plug:surround51".
Native ALSA applications generally can choose plug:surround51 in their
device settings dialogues (or via the command line).
